This recipe is a family Favorite: I give my family the options to select their Garnishes, Veggies & Cheese .
I Gave my family the option of: Sauté Red Potatoes , Bacon, Spinach, Orange Peppers, Onions,
Shredded Cheddar Cheese, Fresh Spun Mozzarella & Mushrooms
First: Turn on your oven to 375 degrees
Spray nonstick muffin pan with olive oil or the oil of your choice Or Line pan with foil liners
Cut up 6 to 7 small Red Potatoes into very small pieces
Cut 1/4 cup of Onion & Orange Peppers
Heat Pan and add 2 table spoons of Olive Oil
Season Potatoes and add to pan with Onions & Peppers
Sauté for 9mins then turn off the flame
Cook 4 full slices of thick bacon and let cool
You will Need 8 Eggs: Beat eggs add salt & pepper and a drop of milk
Poor eggs into muffin pan/each one half full
Divide Sauté Potatoes & Bacon in all 12 muffin cups.
Add Cheese and Garnishes on top.
Place in the oven for 19 to 24 mins.
